Fabulous Food Friday: Durban Flank Steak

I wish the internet had a scratch and sniff button so you could smell this! The aroma of this steak when it came in from the grill had me looking a lot like Goofy, floating down the stairs with my mouth watering. This recipe came to me from one of my family’s favorite restaurants at Disney World, Boma – Flavors of Africa. Boma is located downstairs in Animal Kingdom Lodge – Jambo House. I will admit I normally do not like buffets – except Boma. I love Boma! Enough with my praise of the restaurant, on with the dish at hand – the Durban Flank Steak.

This recipe was really just for a marinade. It was not a hard marinade to make, obviously harder and more prep work than just opening a bottle and pouring it on, but aside from peeling and mincing the garlic and ginger-root it was just measure and add all the ingredients to a single bowl and mix. Even better, there is no extra or hidden sugar or sodium in the marinade!

The recipe calls for the steak to be marinated for 24 hours. Confession, I totally forgot to marinade the steak beforehand so ours only sat in the marinade for about 1 hour. If it had been in there for 24 hours, I can’t even imagine how much more awesome it would have been. The marinade can be made up to 3 days in advance and stored in the refrigerator.

We grilled ours. We used the searing burner and seared the outside and then cooked it to a medium-rare. It was juicy, flavorful, and the taste was amazing! We did have leftovers from our steak. We saved it for lunch the next day. We heated the steak slightly (just enough to take the chill out of it), sliced it and threw it over a bed of field greens for a salad. Yes, it is just as delicious the next day!
